I love them fresh but I also love them pickled \u2026<\/p>\n<ul>\n<li>on bagels with cream cheese<\/li>\n<li>on cheesy pepperoni pizza<\/li>\n<li>on nachos<\/li>\n<li>in every single Mexican dish I make<\/li>\n<\/ul>\n<p>(hmmm, I think there\u2019s a definite jalapeno\/cheese pattern here)<\/p>\n<p>It could <em>not<\/em> be easier (or cheaper) (or more convenient) (or tastier) to pickle your own.<\/p>\n<p>Here\u2019s the easy version:<\/p>\n<hr \/>\n<h3>Pickled Jalapenos<\/h3>\n<ol>\n<li>Toss sliced jalapenos into a jar and toss in a garlic clove or 2.<\/li>\n<li>Depending on how many jalapenos you\u2019re pickling, bring a cup or 2 of white vinegar to a boil, along with salt (about \u00bd tsp of salt per cup).<\/li>\n<li>Pour the vinegar solution over the jalapenos to cover, and let cool.<\/li>\n<li>Refrigerate for a couple of hours. They\u2019re best the day after.<\/li>\n<\/ol>\n<hr \/>\n<p>You can pickle as few or as many as you want. They\u2019ll keep for weeks, if you can keep them around that long.<\/p>\n<p>I like to keep it simple, but the possibilities for variety are endless, from adding a bit of turmeric to tossing in a few slices of extra hot peppers to spice things up a bit more.
