{"id":1941,"date":"2022-04-15T15:08:32","date_gmt":"2022-04-15T22:08:32","guid":{"rendered":"http:\/\/cuisinestupide.com\/?p=1941"},"modified":"2022-04-15T15:08:32","modified_gmt":"2022-04-15T22:08:32","slug":"hack-the-classics","status":"publish","type":"post","link":"https:\/\/cuisinestupide.com\/?p=1941","title":{"rendered":"Hack the classics"},"content":{"rendered":"<p style=\"text-align: left;\">Over the course of more than two decades as a writer, editor, and columnist for local newspapers, I came to conclude that our readers mostly fell into two broad camps:<\/p>\n<p style=\"text-align: left;\">Those who wanted the news to affirm their world view and comfort them in their beliefs.<\/p>\n<p style=\"text-align: left;\">And those who wanted the news to challenge their opinions and disrupt their assumptions.<\/p>\n<p style=\"text-align: left;\">I think cocktail consumers often fall into the same categories: the folks who want their Old-Fashioneds and their G&amp;Ts served up exactly the same way every time, and the ones who are constantly craving new tastes and experiences.<\/p>\n<p style=\"text-align: left;\">These Sunday Specials are for the latter group. They&#8217;re all variations on popular, recognizable drinks, sometimes with the addition or substitution of a single ingredient. And all will give adventuresome drinkers a new experience and a fresh perspective.<\/p>\n<p style=\"text-align: left;\">Hacking the classics is really simple. You can follow one of two roads:<\/p>\n<ol style=\"text-align: left;\">\n<li>Change lanes by substituting one ingredient for another with similar characteristics (herbal liqueurs for aromatic bitters, for example, or citrus spirits for citrus juices); or<\/li>\n<li>Leave the path entirely by introducing an unexpected ingredient (a chile pepper or a raw shellfish).<\/li>\n<\/ol>\n<p style=\"text-align: left;\">For <a href=\"https:\/\/www.thespruceeats.com\/gimlet-cocktail-recipe-759304\">Gimlet<\/a> fans, consider the <a href=\"https:\/\/www.thespruceeats.com\/kamikaze-cocktail-recipe-759313\">Kamikaze<\/a>, which adds a dash of citrusy triple sec to the vodka-and-lime-juice formula. If you prefer gin to vodka, as I do, feel free to use it instead; you&#8217;ll be making a London Kamikaze. The orange hit from the triple sec gives the drink a complexity that the Gimlet could only wish for.<\/p>\n<p style=\"text-align: left;\">An excellent variation on the <a href=\"https:\/\/www.liquor.com\/recipes\/manhattan-2\/\">Manhattan<\/a> is the <a href=\"https:\/\/www.thespruceeats.com\/the-blind-pilot-cocktail-recipe-761418\">Blind Pilot<\/a>, created by longtime Portland bartender <a href=\"https:\/\/www.thespruceeats.com\/lance-mayhew-758956\">Lance Mayhew<\/a>. This one omits the bitters but adds herbal liqueur\u2014Gailliano, which you&#8217;ll be happy to find a use for once you&#8217;ve tired of <a href=\"https:\/\/cocktail-society.com\/recipes\/harvey-wallbanger\/\">Harvey Wallbangers<\/a>. It&#8217;s close enough to a Manhattan to be familiar but far enough away to deserve a place of its own on the bar menu.<\/p>\n<p style=\"text-align: left;\">I&#8217;m not a big fan of tequila, but the most delicious <a href=\"https:\/\/www.delish.com\/cooking\/recipe-ideas\/a20139300\/best-classic-margarita-recipe\/\">Margarita<\/a> I ever tasted was the spicy version at <a href=\"https:\/\/www.dosalasrestaurants.com\">Dosalas<\/a>, the swanky waterfront tequila bar in Vancouver, Wash. You have several options for replicating this caliente concoction: using a chile-infused tequila, of which <a href=\"https:\/\/www.thrillist.com\/spirits\/tequila\/best-spicy-tequila\">there are many<\/a>; making or buying a pepper-infused simple syrup; adding a touch of chile liqueur, such as <a href=\"https:\/\/anchoreyes.com\">Ancho Reyes<\/a>; or my preferred method, using a couple of slices of fresh jalape\u00f1o, muddled in the shaker with or without the seeds. The pepper has bite, yes, but also a freshness that you can&#8217;t get any other way.<\/p>\n<p style=\"text-align: left;\">Finally, a cocktail I have yet to try but which I&#8217;ll introduce to my lips at the first opportunity: the <a href=\"https:\/\/nativeflavor.org\/oyster-martini\/\">Oyster Martini<\/a>. Unlike the many cocktails that have come along in the past 20 years bearing the &#8220;-tini&#8221; designation simply because they&#8217;re served in a Martini glass, this one is really just a Martini with raw oysters instead of olives.<\/p>\n<p style=\"text-align: left;\">Developed by Dan Severt, bar manager at the <a href=\"https:\/\/www.taylorshellfishfarms.com\/location\/queen-anne\">Taylor Shellfish Farms Queen Anne oyster bar<\/a> in Seattle, this cocktail was touted by the bloggers at <a href=\"https:\/\/nativeflavor.org\/\">Native Flavor<\/a> as a great way to enjoy half a dozen oysters on the half shell: three on a plate and three in the drink.<\/p>\n<p style=\"text-align: left;\">It&#8217;s not a drink for everyone\u2014and certainly not for those who want their Martini world view predictable and eternal.<\/p>\n<hr>\n<h3><a href=\"https:\/\/cuisinestupide.com\/wp-content\/uploads\/2022\/04\/IMG_8339.jpg\"><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-medium wp-image-1951\" src=\"https:\/\/cuisinestupide.com\/wp-content\/uploads\/2022\/04\/IMG_8339-225x300.jpg\" alt=\"\" width=\"225\" height=\"300\" srcset=\"https:\/\/cuisinestupide.com\/wp-content\/uploads\/2022\/04\/IMG_8339-225x300.jpg 225w, https:\/\/cuisinestupide.com\/wp-content\/uploads\/2022\/04\/IMG_8339-768x1024.jpg 768w, https:\/\/cuisinestupide.com\/wp-content\/uploads\/2022\/04\/IMG_8339-1152x1536.jpg 1152w, https:\/\/cuisinestupide.com\/wp-content\/uploads\/2022\/04\/IMG_8339.jpg 1500w\" sizes=\"auto, (max-width: 225px) 100vw, 225px\" \/><\/a><\/h3>\n<h3 style=\"text-align: left;\">London Kamikaze<\/h3>\n<p style=\"text-align: left;\">Adapted from <em><a href=\"https:\/\/quench.me\/mixed\/londonkamikaze\/\">Quench Magazine<\/a><\/em><\/p>\n<p style=\"padding-left: 40px; text-align: left;\">1 ounce gin<br \/>\n1 ounce triple sec<br \/>\n1\/2 ounce fresh lime juice<br \/>\nLime wedge for garnish<\/p>\n<p style=\"text-align: left;\">Shake liquid ingredients in a cocktail shaker with ice. Strain into a chilled cocktail glass. Garnish with lime wedge.<\/p>\n<h3 style=\"text-align: left;\">Blind Pilot<\/h3>\n<p style=\"text-align: left;\">Adapted from <a href=\"https:\/\/www.thespruceeats.com\/the-blind-pilot-cocktail-recipe-761418\">Lance Mayhew<\/a><\/p>\n<p style=\"padding-left: 40px; text-align: left;\">1 ounce bourbon<br \/>\n1 ounce sweet vermouth<br \/>\n1 ounce Galliano liqueur<\/p>\n<p style=\"text-align: left;\">Add all ingredients to mixing glass, then add ice. Stir vigorously for 30 seconds. Strained into a chilled cocktail glass.<\/p>\n<h3 style=\"text-align: left;\">Spicy Margarita<\/h3>\n<p style=\"text-align: left;\">Adapted from <a href=\"https:\/\/barfecto.com\/spicy-margarita\/\"><em>Barfecto<\/em><\/a><\/p>\n<p style=\"padding-left: 40px; text-align: left;\">2 ounces blanco tequila<br \/>\n1 ounce fresh lime juice<br \/>\n1\/2 ounce orange liqueur<br \/>\n1\/2 ounce agave syrup<br \/>\n1 lime wedge<br \/>\n2 thin slices of jalape\u00f1o (seeds optional)<br \/>\nSalt and jalape\u00f1o slices for garnish<\/p>\n<p style=\"text-align: left;\">Rub the rim of a rocks glass with lime wedge, dip in salt to coat, and set aside.&nbsp;<\/p>\n<p style=\"text-align: left;\">Add the jalape\u00f1o slices to a shaker and gently muddle.&nbsp;Add liquid ingredients and ice and shake until well-chilled.&nbsp;Strain into prepared glass over fresh ice.&nbsp;Garnish with a jalape\u00f1o slice.&nbsp;<\/p>\n<h3 style=\"text-align: left;\">Oyster Martini<\/h3>\n<p style=\"text-align: left;\">Adapted from <a href=\"https:\/\/www.taylorshellfishfarms.com\/location\/queen-anne\">Dan Severt<\/a>&nbsp;and <a href=\"https:\/\/nativeflavor.org\/oyster-martini\/\">Native Flavor<\/a><\/p>\n<p style=\"padding-left: 40px; text-align: left;\">3 ounces vodka<br \/>\n\u00bc ounce dry vermouth<br \/>\n6 small fresh oysters<\/p>\n<p style=\"text-align: left;\">Shuck oysters and place three on the half shell on a small plate. Pour the other three, including the oyster liquor, into a chilled cocktail glass.<\/p>\n<p style=\"text-align: left;\">Add vodka and vermouth to cocktail shaker with ice. Stir until well chilled. Strain into the glass with the oysters.<\/p>\n<p style=\"text-align: left;\">Alternate sips of the Martini with oysters from the plate.
